The company

The confectionery Rolo in Elicera, Portugal, has already equipped 3 of its holdings in HB units. The 4th Plant was recently completed. In this company croissants and other bakery products are the highest quality and hygiene automatically generated. The high degree of automation of all businesses and the highest hygiene requirements were met in these businesses as the main claim.

The concept of automation

Silos:

Floursilos with Silo-Weighingstation and content control.

Sugar silos:

Sugar silos with Silo-weighingstation and content control.

Glucose tank:

Capacity of 5m³, with metering pump and counter.

Ingredients dispenser:

For bakery improvers, dextrose and flavorings.

Liquid egg:

2 changeable containers with cleaning and cleaning program and insulated ringpipes as well as meteringpump and counter for accurate dosing.

Liquid yeast:

2 changeable containers with cleaning and cleaning program and insulated ringpipes as well as meteringpump and counter for accurate dosing.

Liquid ice:

2 tanks with a capacity of 1000 Liters each for icemaking at -3°C and automatic dosing into lowerable dust exhaust system above the mixing.

Central hopper scale:

Flour, sugar and all ingredients from the compo such as dextrose, bakery improvers etc. are recipecontrolled and automatically conveyed into the scale.

Central dust exhaust system:

The central dust exhaust system keeps the mixingstation dust free.

Water metering:

The water mixing device doses the water accurate and at the correct moment in the mixingstation. All controlled by the hb-backcontrol.

Recipecomputer:

The recipe computer hb-backcontrol controls all operations, such as ice-making, predough making, refrigeration of the machines and all dosing, raw materials and recipes. The "office connection" is standard, as well as the remote maintenance for the day and night.
