The company
The bakery Nopek a.s. from Hrušová (Czech Republic) is the fourth largest bakery in the country with 6 independent bakeries and 15 shops, it employs a total of 600 employees. The Managing Director Mr. Stanglica attaches great importance to high quality standard of the products of its bakeries and hygiene and cleanliness. Despite high demands, the prices of baked goods should be favorable for the customer. Hence the decision to automate with a modern HB-technology equipment. The main production program of the bakeries are traditional bakery products such as whole wheat bread, white bread and sweet pastries.
Components of automation
The concept of automation
Silos:
Two aluminium silos for wheat flour with a delivery control.
Silo for dumping station:
Used for specialflour and shret.
Ingredients dispenser Compo 4000:
For 16 different ingredients. Filling via dumpingstations and for a automatically gram-exact weighing of Salt, baking ingredients, grains, sugar etc. The Compo has automatic pneumatically cleaned filters. The ingredients are pneumatically and dust-free dosed to the Central - weighingstation.
Oiltank with liquid conveying line:
The oil is - recipe controlled - metered and conveyed to the mixing station.
Yeast dissolver with liquid conveying line:
The yeast is - recipe controlled - metered and conveyed to the mixing station.
Central hopper scale:
Flour as well as powdery, crystalline and granular ingredients are dosed into the scale.
Lowerable dust exhaust system:
Under the hopperscale is a pneumatic raising and lowering dust exhaust system.
Central dust exhaust system:
The central dust exhaust system is connected both to dumpingstations as well as to the compo and the lowerable dust exhaust system.
Water metering:
Via a hb11 watermixingdevice hot, cold and icewater are dosed into a mixer.
Ingredients scale:
A ingredients scale for 30kg is connected to the recipecomputer and is used to weigh the not-automated ingredients such as raisins, fat etc.
Recipe computer:
The hb-backcontrol is the central control unit for all equipment such as Silos, Compo, Oil, Yeast, Water etc.
Saved Recipes are automatically processed therewith.
